What is a Lamington?
A Lamington is an Australian sponge cake coated in an outer layer of chocolate and rolled in shaved coconut. The same cube shaped desserts are truly a national favourite. Lamingtons are said to date as far back as 1901 originating from Brisbane, Australia and were named after Lord Lamington or his wife. In some parts of Australia variations have a layer of raspberry jam or cream between two Lamington halves.
