What is Bolinho de Bacalhau?

Bolinhos or pastéis de bacalhau, also known as salt cod fritters or salt cod croquettes, is typically made from a mixture of potatoes, codfish, eggs, parsley, and onion. They are shaped like a dumpling, deep fried and should be slightly crunchy on the outside and soft and creamy on the inside. The fritters became just as popular in Rio de Janeiro as they are in Portugal and can found at most bars in Rio.
