What is Apochti?

A local delicacy in Santorini, Apochti is cured pork loin. The pork is cured by soaking it in vinegar for a few days thereafter adding seasoning such as pepper and then hanging it to dry in the sun. This delicious meze is similar to louza from the Cyclades.
