What is Carciofi alla Romana?

Carciofi, or artichokes, is a Roman specialty found in the spring (Feb to May), when they are young, and really tasty. Roman artichokes are world-famous as the country is responsible for almost 2/3 of the world’s artichoke production. One of the most common ways to prepare it are alla romana (Roman-style), where the artichokes are stuffed with garlic, mint, and parsley before braising them in a bath of olive oil and water.
