What is Suppli?

Supplì is a dish originating in Rome that is similar to Sicily’s arancini. They are deep-fried risotto balls with tomato sauce, and a delicious melted cheese center. As you bite into this snack, the soft mozzarella becomes stringy like a telephone line, which is why it is also known as “Suppli al telefono.” Suppli can be found in most bars and pizzerias as an antipasto.
