What is Kyoto-style Sushi?
Kyoto-style sushi uses mainly cured or cooked fish. Because Kyoto is located in the center of the island, it does not have access to fresh fish as the coastal areas do. That means in the years before refrigeration, the sushi chefs of Kyoto used mostly cured fish or fish that were known to keep fresh for longer periods of time to make sushi.
