What is Shojin Ryori?

Shojin-ryori in Japan is eaten mainly by Buddhist followers, and prohibits inclusion of meat, fish, and root vegetables, as harvesting them will result in the death of the vegetables. Shojin-ryori was originally brought to Japan by monks who studied in China.
