What is Soba?
Soba is the Japanese name for buckwheat, but usually refers to thin noodles made from buckwheat flour. Soba noodles are either served cold with a dipping sauce, or in hot broth as a noodle soup. In Japan, soba noodles are served in a variety of settings, but can be found at expensive specialty restaurants. Markets or grocery stores sell the dried noodles.
