What is Gaeng or Kaeng Khiao Wan?
Gaeng Keow Waan is green curry made with fresh green chilies, garlic, shallots, lemongrass, white pepper, coriander root, kaffir lime peel, shrimp paste and sea salt. The green curry paste is used in a dish that usually includes chicken or another type of protein, coconut milk, Thai eggplant, basil, bamboo shoots, chili peppers, green curry paste, fish sauce, and sugar. The chicken version of the dish (Gaeng Keow Waan Gai) is the most popular and is typically served with rice.
Green curry is considered the spiciest Thai curry when compared to red curry, yellow curry, penang curry, and massaman curry, but the heat will also differ between the regions and chefs. This dish is served in many General Thai restaurants around central Thailand.
