What is Pla Pao?

Pla Pao is a whole fish stuffed full of lemongrass, coated in a thick layer of salt, and grilled over charcoal. The salt protects the skin from sticking to the grill and leaves the flesh moist and flaky. The fish is traditionally served with chili garlic sauce, Thai basil, and rice or thin rice noodles.
